Chef Erick’s Approach


Chef Erick Cielo’s food comes from the heart. It is shaped by the places he has traveled, the kitchens he has worked in, and the meals he has shared with family and friends along the way.


At Torikaya, he brings those experiences together through approachable Japanese comfort food with just a touch of Chattanooga. His menu gives him room to be creative while still making food that feels familiar, generous, and easy to enjoy.


You can see that spirit in dishes like the chicken karaage, made with two-day brined chicken thighs and served with chow chow and garlic mayo. It is rooted in Japanese technique, but finished with a local touch that makes it feel right at home here.


Chef Erick believes good food doesn't have to be complicated. It should be thoughtful, comforting, and made with care. Whenever possible, he sources locally and lets quality ingredients guide the dish.
